We have been looking forward to an evening in the Arvenstube for a long time. Once we enter the rustic dining room, we immediately notice the fine smell of Swiss pine wood, and pictures by Gottardo Segantini, for example, hang on the walls. In such surroundings it is a pleasure to eat. Also because the menu offers something for everyone. Classics such as Stroganoff, Züri Gschnätzlets or Beeef Tartar, but also imaginative starters called “Capuns Mare e Monti”. Then there are also main courses for two people or more, such as the chataubriand or a whole chicken, and if ordered in advance, a salt-crusted sea bass or a côte du boeuf. The focus is on products from the surrounding area and the local garden. We are struck by the fair pricing: Two courses cost 59 CHF, we order three for 79 CHF. To start, there is a fine ham on a wooden board, a nice bread basket, butter and olive oil.

The wine list almost knocks us off our feet: it offers everything for wine connaisseurs, including – extra applaud for this – many top wines from Switzerland. If you look at the prices, you have to rub your eyes twice, the margins are minimal. This pleases us, because we order a wine from Marie-Thérèse Chappaz, which usually costs 30 to 40 percent more in other restaurants. The dishes confirm the meticulous work of the entire Waldhaus brigade under the guild of chef Gero Porstein. The duet of fish with white tree nut polenta is a culinary delight, as is the “alpine pig” in the form of confit pork belly. For dessert we are delighted by the lightness of the rhubarb crème brulée and the fine friandises. To this we would almost have to order a dessert wine…
